fairy cakes

A tea party wouldn’t be a tea party without miniature cakes. I do believe this is possibly the best fairy cake recipe ever. The cakes are so light and fluffy!! And the recipe is super easy too.

Ingredients:

4oz Self Raising Flour   ( Or if you only  have plain flour, add 1.5 tsp baking powder)

4oz Butter

4oz Caster Sugar

2 eggs

This makes about 10 cakes so I always make up a double batch.

Oven 190c/375f

Cream the butter and sugar until light and fluffy. Beat the eggs in a little bowl and add them gradually to the butter and sugar mix alternating with the flour so it doesn’t curdle. Mix well. I love my Kitchen Aid for this.

Now fill the cake cases 3/4 full. Anymore and they just bake over the top of the cases and just don’t look pretty. Bake for 15-20 mins until golden on top.

We like a glace icing topping. 4oz icing sugar (or double it if you are making a double batch).

Sift the icing sugar in to a bowl. Gradually add 1 tbsp warm water and keep mixing well. If you need to add more water do it in drops and gradually. It should be able to cover the back of a metal spoon. If it does become too runny, just sift more icing sugar in to make it thicker. Then decorate.

I also like to make these in larger muffin cases and then remove from the cases when cool. Cut in half and add jam and buttercream frosting inside and then piece together again. You have mini victoria sponges then. Just sift over with icing sugar then to finish. So cute!!

As my kids are teens now, trying to find family time gets trickier and trickier. We always have a family dinner together and then once everything is cleaned up and the kids have had their baths/showers, we all get together for tea and cakes or cookies and watch something on tv for a bit. It’s a nice way to end the day and spend a little time together.
