It’s been a while since I shared a recipe on the blog. So I thought I’d share my favourite very healthy salad recipe.
We love quinoa. It’s so good for you and really tasty too. I like to make this salad up in a larger quantity and keep in the fridge for a few days for lunches. It’s easy, quick and healthy. I’m terrible otherwise at working through the day and forgetting to take lunch breaks.
It’s simple. I use about 200g of quinoa and put it in a saucepan with enough water to cover. Bring it to the boil and leave to simmer for about 15mins. Keep an eye out and make sure that it doesn’t dry out.
Rinse, drain and leave to cool.
It’s a great way to use up bits in the fridge. We like red onion, celery, cucumber, peppers, grated carrots and cherry tomatoes.
Once cool I stir in 3 heaped teaspoons of mint sauce and then my rainbow of veggies/fruits and mix well.
It’s really good and very healthy.
