A friend shared a cookie recipe a few years ago which I tweaked and now a few years on my daughter Hollie, has perfected. Hollie really does make the best cookies ever. They are so good. So today I am sharing the recipe with you.

Hollie’s Choccie Chip Cookies
You will need:
100g/4oz butter softened
100/4oz caster sugar
150g/6oz self raising flour (or multi purpose flour with an adding raising agent)
100g/4oz choc chips
To Make:
Preheat oven 180c/350f /gas 4
Beat butter & sugar until creamy. Mix in half the flour then add choc chips and rest of the flour. If it’s too dry add a drop of milk.
Work dough together with your fingers. Divide into balls and place well apart on a baking sheet. Bake for 6 mins. They will be slightly golden, but still rather pale.
They are best eaten whilst still warm.
I know it doesn’t sound long to bake them for, but this is what makes them so soft and gooey. They will also remain soft for the next day….if they last that long. We tend to just make up double batches in one go now.
I love it when Hollie bakes these and brings me a fresh one straight from the oven to my desk.
