It’s Cake Friday!!

It’s Pumpkin Cake with choccie chips and cream cheese frosting, This is one of my favourite cake recipes…..EVER!!

It’s so moist and just so delicious and the best bit….you just throw it all in.

Here’s what you need:

4 eggs

 2 cups sugar

1 cup veg oil

1 can (16oz) pumpkin

2 cups plain flour

2 tsp baking powder

2 tsp ground ginger

1 tsp baking soda

1 cup choccie chips

Preheat oven 175c

And all you do is…..Throw it all in a mixing bowl. Mix well, folding in choccie chips last.

 Grease a big rectangular baking tin. Bake 25-30min. So easy.

Once cool you can add the frosting to the top of the cake.

You just mix together a couple of tubs of Philadelphia Cream Cheese, 1/4 cup of melted butter. Add 2 cups of icing sugar and mix well. Then cover the cake.

I love this cake so much that I turned the recipe in to a canvas to hang on my kitchen wall. This is how much I love this cake!
