It’s all my friend Kirsty’s fault. After visiting her a while ago and having a Strawberry Daiquiri at her house, I can’t stop making fruity cocktails. I’ve always been partial to the odd Tequila Sunrise this time of year, but I’m totally hooked on fruity Daiquiris now. Bad Kirsty!!!

A few friends have asked me to share how they are made, so I thought I would share them here so that we can all enjoy the fruitiness together.

To just make a Strawberry Daiquiri all you need to do is…

  • take a punnet of strawberries (around 450g) and cut them up in to small chunks, excluding the green bits (they go in the guinea pig cage in our house)
  • place the strawberries in a jug, add 1/2 cup of sugar and a squeeze of a whole lime and then 1/2 cup of Bacardi
  • pop in the fridge for a good couple of hours
  • take out of the fridge and blend down. I also like to add a cup of crushed ice to the blender. Then pour and enjoy.

These are lovely, but we’ve found that by adding a tin of peaches, along with the juice in with the strawberries, it’s even yummier. Tinned mangos are also lovely in with the strawberries. I did try this week by adding fresh raspberries too, it tasted lovely, but there were too many seeds. You can also add more Bacardi if you need to : )

Now, obviously  the kids love the look of these fruity drinks, so we’ve been playing making family friendly cocktails too. Obviously leave out the rum. With just the fruit they are equally as yummy, but I did add 1/2 glass of the fruit cocktail and then topped up with Sprite. These were so good and really refreshing.
